Bacon Wrapped Salmon
Fancy a quick meal? Fire up your oven to 180C (350F?) ...

I've made this before using pancetta, but this time: bacon. Served with some leaves, asparagus and a few potatoes, you can get this lot from ingredients to a meal on a plate in about 20 minutes.

First, wrap a piece of bacon around your salmon fillets. Commit to the oven - this will need 20 minutes.

Next, get your veggies boiling, steaming or whatever it is you do with the veggies you've picked. I went with asparagus and potatoes; so, potatoes in to boil (15 minutes) and asparagus on top to steam (for the last few minutes).

Meanwhile, dress a plate with some salad leaves, drop on a few capers, a few slivers of pickled garlic and a good slosh of olive oil.

Everything cooked?

Plate up ...

  1. Does the bacon cook fully before the fish is overdone? I usually cook my fish for less than 20 minutes in the oven.

    1. At 180C/350F for 20 minutes, both are just right. The bacon almost protects the largest part of the fish which then cooks a little slower. Yes, the bacon was cooked well enough and the fish was not overdone.
